Perfect Mother’s Day Vegan Pancakes!

Have just had these for breakfast and can vouch for their deliciousness!

Makes 6 4-inch pancakes

Ingredients:

  • 1 cup flour (all-purpose or whole wheat)
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground flax seed
  • 1 cup + 1 tablespoon non-dairy milk
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon coconut oil
